We only use certified Louisiana crawfish shipped in right before your event so they are fresh when we get them. The crawfish are then hand-washed on our custom cleaning station. This rigorous process requires that we literally touch each and every crawfish by hand as we remove any dead crawfish and debris. Once the crawfish are initially washed and sorted the live crawfish are then washed a final time and purged. This ensures you get the livest, healthiest, cleanest crawfish before they go into the boiler.

Our 3-stage cooking process involves boiling the crawfish in heavily seasoned water, soaking it in more seasoned water until all the flavor is absorbed into the crawfish, then optionally sprinkling it with our "Lafayette" or "New Orleans" special recipes. The Lafayette is a family secret that combines a unique blend of savory flavors to create a recipe with the tangy taste of lemon, spicy peppers, and zesty garlic. The "New Orleans" style is a traditional Louisiana recipe with a blend of ingredients that includes cayenne pepper, salt, a hint of garlic and onions, and 8 other herbs and spices.

Yeah: it's kind of a big deal. With our fleet of "Big-Rig" Boiling units, Crawdad's! can handle any sized event. These 16' rigs were custom-designed by the some of the finest Cajun archetects, to allow us to boil up to 2,500 pounds of our Hot-n-Spicy Crawfish per hour! The Crawdad's! fleet is equiped with a total of 4 of our "Big Rig" units. That's right: 4. No other crawfish caterer has the fleet or logistics to handle as many events simultaneously, or events of such size.

With our fleet of crawfish catering vans, we tackle jobs both big and small. Our fleet allows us to better serve our customers with our All-Inclusive Premium Crawfish Boil packages, Basic Backyard Boils and even our "Crawfish 2 Go" deliveries. Crawfish Boil FAQ's

Crawfish season usually starts in late February and last through late June. July 4th is typically the last time frame that crawfish is available.

Our crawfish comes directly from the crawfish farms in Louisiana. They are specially ordered from Louisiana craw-fishermen just before your event so that we have the largest, freshest, liveliest crawfish available to cook for your party.

We use a unique blend of seasonings and a recipe that comes directly from Lafayette, Louisiana. In addition to that, we take the extra time and extra measures to ensure that our crawfish soak up and retain all of the flavor during our cooking process. We make sure the crawfish is cooked perfectly, and all that good flavor is soaked in. You'll know the difference the minute you taste 'em!
